There are some people who prefer vanilla over chocolate. I like both vanilla and chocolate. I have heard of some people that do not like chocolate at all. We all have different tastes, so that’s why baking is so versatile and fun.
And that’s also why I decided to make vanilla cookies. It’s difficult for me to omit chocolate from a cookie recipe, because there are so many people around me that love and request chocolate chip cookies. I do not have requests for “Vanilla Chip Cookies”, however. But maybe that’s because I have never made them! People don’t know what they don’t know.
So, I did have a whole bunch of Disney’s Frozen Vanilla Baking Chips. This is because my mom likes to bargain shop, and she saw these special baking chips on a good clearance sale. So, because I am the baker, I was the recipient of these baking chips. BUT, these are a discontinued product, so I would suggest using
Hershey Vanilla Chips, because those have a perfectly nice vanilla flavor that would do well in this recipe.
I think that, besides the
vanilla chips, the cookie dough itself needed a strong vanilla flavor. I opted to use all white sugar, and no brown sugar, so it could be differentiated from the traditional chocolate chip cookie dough.
And of course this recipe would need vanilla extract. BUT, I opted for
“imitation” vanilla, because that seems to have the stronger vanilla flavor, which is a lot less subtle than pure vanilla extract.
Imitation vanilla gives that “vanilla wafer” flavor. I thought that would be perfect for this recipe.
The result was a very soft, lightly chewy cookie with a pleasant vanilla flavor. This was a refreshing change from the usual chocolate chip cookie, and I feel like this one is going to be requested in the future as well.
