Baking Tips And Tricks

INGREDIENTS
  • If you need room temperature eggs, put them in a bowl of warm water for about 10 minutes.
  • When measuring flour, spoon it into a dry measuring cup and level off. Don’t dip the cup into the flour to measure; this may result in more flour than you need. 
  • Also, when it comes to measuring oil, corn syrup or any other greasy or sticky ingredients, it may help to coat the measuring sup with nonstick spray before measuring.
  • Please keep in mind that there are many different brands of baking chips, and there may be some variation in how they melt, as well as the final product after melting. 
  • To soften butter quickly, use the microwave. As with ovens, microwaves also vary in how long it takes to heat something. Try 5 seconds at a time to prevent the butter from melting.
 
PREP
  • Start the oven preheating before beginning a recipe, so it will be completely preheated when you are ready to start the baking process
  • Always read through the entire recipe prior to making to ensure you have everything you need
  • Get your pan ready  before mixing everything together. It’s easy to forget if it needs any kind of greasing. You don’t want your baked good stuck to the pan!
 
 
TECHNIQUES
  • If your oven has a light, utilize that to visually check for doneness in a recipe. The less the oven is opened, the better. If it needs to be removed from the oven to be checked for doneness, that’s perfectly fine. I’ve just found that I’ve sometimes had to add a little bit more baking time to adjust for the heat loss from opening the oven.
  • Check to see if the recipe is done baking at the shortest baking time. You can always bake something further if needed, but once it’s overbaked, there’s not much you can do. 
  • All ovens are different, so you may find that you need to bake more or less time than the recipe indicates. I know that my previous oven baked faster than the oven I currently have!
  • I like to taste-test my recipes even before I put them in the oven. I do this by scraping a little bit of uncooked batter/dough from the mixing bowl onto a paper towel. I microwave it for about 10 seconds or so, to quickly “bake”. I scrape it off the paper towel with a fork. It makes a nice little sample! 
  • I use an electric hand mixer or I just mix by hand with a large spoon. I do not have a stand mixer, but if you do, then feel free to use it.
