Cinnamon Cookies With Pumpkin Spice Morsels

Have a yummy fall treat with these cinnamon cookies that feature pumpkin spice flavored baking morsels!

 I really look forward to the fall; it is my favorite season by far. I love all the colors changing, going to haunted houses, watching scary movies, enjoying the weather, and also….baking. 
     I have yet to go to an orchard to pick some apples, which would give me plenty of fall recipe fodder. BUT, I do have some pumpkin spice morsels that are just waiting to be used.
     I did not have any canned pumpkin, but that’s okay; I could just make a cinnamon cookie base and add the pumpkin spice chips.
     These cinnamon cookies smell so good while baking….and they taste even better. They are surprisingly rich for being such a simple recipe. They are soft (although one batch of mine were slightly underbaked, but that’s fine with me) and very flavorful. I love the pumpkin spice chips too!

INGREDIENTS
DIRECTIONS
  1. Preheat the oven to 350 degrees.
  2. Line two cookie sheets with parchment paper
  3. Whisk together the flour, cinnamon, baking soda, and baking powder; set aside.
  4. Cream together the butter and brown sugar until fluffy.
  5. Add the egg and vanilla, mixing well.
  6. Stir in the flour and the pumpkin spice morsels until combined.
  7. Drop by tablespoons onto the prepared cookie sheets.
  8. Bake for 10-12 minutes.
  9. Allow to cool on cookie sheets.
