Ultimate Peanut Butter Cookies

Delicious peanut butter cookies filled with chopped chocolate peanut butter cup candies and peanut butter morsels!

If there is any one ingredient I can generally rely on to make a delicious recipe, it’s peanut butter. I LOVE peanut butter. And most of the people around me share that opinion, so you can imagine that I have a constant steady supply of peanut butter to support my recipe-creating process. 
     I needed yet even more cookies to fill up a couple of Christmas treat boxes I am making. I did not yet have a peanut butter cookie to place in these boxes, so that had to change. 
     I was striving for a very rich cookie filled with peanut butter flavor. Well, of course, I had to start with the main ingredient: peanut butter. I decided to use my go-to peanut butter, because it has such a classic peanut butter flavor that translates well in baked goods, and it is truly delicious on its own. 
     Another addition that I thought would make it extra delicious is peanut butter cups. I had a lot of them in my candy jar for such an occasion! 
     As I said, I wanted to make these extra peanut buttery, so I also decided to include some peanut butter baking chips
     I made 20 generously-sized peanut butter cookie mounds, divided amongst two cookie sheets.
     I had a feeling these were going to be yummy… and I was right! These were rich and full of peanut butter flavor, with the classic velvety peanut butter texture as well! The chopped peanut butter cups and peanut butter baking chips made these extra delicious!   1. Preheat the oven to 350 degrees.
  2. Line two cookie sheets with parchment paper.
  3. Whisk together the flourbaking sodabaking powder and salt; set aside.
  4. In a large bowl, beat together the peanut butter, butter and dark brown sugar until creamy.
  5. Add the eggs and vanilla extract, beating well.
  6. Stir in the flour mixture, chopped peanut butter cups and peanut butter chips until thoroughly mixed.
  7. Drop by rounded tablespoons onto the prepared cookie sheets.
  8. Bake the sheets, one at a time, for about 10 minutes.
  9. Allow to cool on the sheets a few minutes before transferring to a cooling rack to cool completely.
