Since one of my sisters has a sensitivity to wheat, I was searching my brain to come up with a flourless treat recipe. I immediately thought of a flourless peanut butter cookie recipe I’d seen floating around the internet, and I thought I would throw my rendition into the mix.
I knew that I wanted to keep the ingredients as minimal as possible. I had seen several variations of this recipe idea, but I liked the most basic formula I’ve come across, which would be:
peanut butter, egg and sugar.
But I personally wanted this to taste more like
peanut butter than sugar, while still being sweet enough to be considered a cookie. So I made the proportion of
peanut butter higher, relative to the proportion of sugar.
So, this cookie is dominated by
peanut butter and not
overly sweet, but still sweet enough. Give it a try if you prefer a little less-sweet peanut butter cookie!
