White Chocolate Raspberry Bars

INGREDIENTS:
DIRECTIONS
  1. Preheat the oven to 350 degrees.
  2. Spray a 13×9 inch pan with nonstick spray
  3. Whisk together the flour, baking powder and salt.
  4. Melt together the white chocolate and the butter. 
  5. Stir the sugar into the melted mixture.
  6. Add eggs and mix until combined
  7. Thoroughly stir in the sour cream and vanilla.
  8. Add the flour mixture and stir until completely combined.
  9. Spread 2/3 of the batter into the prepared pan.
  10. Now spread the raspberry preserves over the batter in the pan.
  11. With the remaining 1/3 batter, stir in the white chocolate chips.
  12. Drop by dollops over the raspberry preserves
  13. Bake for 30-40 minutes, or until very light brown (tan) spots begin to appear
  14. Allow to cool completely before cutting
NOTES
  • Check to see if this is done at the minimum baking time. When I first made it, I slightly overcooked it by mistake. If the entire top is brown, then it was probably overcooked.
  • I used these preserves, but feel free to use jam instead if you’d like.
  • My 18-ounce jar of preserves made about 2 cups.
