Quick Cookies & Cream Bars
A fast and delicious cookie bar featuring Cookies & Cream baking bits
This recipe was inspired by my 4-Ingredient Chocolate Chip Bars. These would be considered a 4 ingredient bar, if it were not for the vanilla glaze! But I felt like it would put the perfect accent on the finished product. So I felt there was too much gray area to label them 4-ingredient bars. But that’s neither here nor there, because they use minimal ingredients, and I would consider them just as easy as my other recipe.
I knew I had to experiment with the chocolate graham cracker crumbs after the success I’d had using the regular graham cracker crumbs in my 4-ingredient bar recipe. But I didn’t want to mimic the last recipe exactly.
Instead of caramelizing the sweetened condensed milk, I just added it as is. I felt this was more fitting for a ‘cookies and cream” theme and may not benefit from the added process of caramelizing the milk.
I need cookies too, right? Well… I didn’t have any. BUT! ….. I had Hershey’s Cookies & Cream Baking Bits, which are quite tasty!
Several minutes after these were out of the oven, my spouse sampled a small piece. He said they tasted like Count Chocula cereal and also made the suggestion of cream cheese frosting.
However, I had no cream cheese… maybe next time. So, I compromised and made a vanilla glaze.
So besides being fast and easy, these ended up being very tasty. Please try them out for yourself.

Ingredients Section:
QUICK COOKIES & CREAM BARS
- 1 (14oz) can sweetened condensed milk
- 3 eggs
- 2 cups chocolate graham cracker crumbs
- 1 (9oz) package Hershey’s Cookies & Cream Baking Bits
- Quick Vanilla Glaze
QUICK VANILLA GLAZE
- 1/2 cup powdered sugar
- 1 TBS milk or half & half
- 1/4 tsp vanilla extract
Directions:
QUICK COOKIES & CREAM BARS
- Preheat the oven to 350 degrees.
- Grease an 8×8 square pan.
- Beat together the sweetened condensed milk and eggs on medium-high speed 2-3 minutes until foamy.
- Add graham cracker crumbs, and stir until thoroughly combined.
- Stir in baking bits.
- Pour into the pan.
- Bake for about 20 minutes or until a toothpick inserted in the center comes out clean.
- Allow to cool completely.
- Drizzle with Quick Vanilla Glaze
QUICK VANILLA GLAZE
- Combine all ingredients in one bowl.
- Stir until thoroughly combined.
- Drizzle with a spoon over the cooled bars.
Notes about this recipe:
- If you cannot find the specific Hershey’s baking bits, substitute 2 cups of crushed Oreos. I haven’t tried it, but I’m sure that would be delicious
- If you don’t want to make the glaze, that’s okay; they’ll just taste more like Count Chocula cereal, which is yummy too.
